ah, leftovers. i am going to skip right past thanksgiving, since i've never cooked a thanksgiving dinner and don't plan to anytime in the near future, and head straight to leftovers. i made this soup a couple weeks ago with chicken, but there's no reason not to sub it out for turkey. looking for other uses for leftover turkey? check out a few of my favs after the break.

tomato, bean, and barley soup
i can't believe i'm sitting here in pants and a long sleeved shirt, listening to the pouring rain, and hoping the temperature will reach 60 degrees today. just two weeks ago, we were turning on the air conditioning as the temp hit above 90 for a couple days in a row. the change in weather messes with my meal planning - one week we're eating salads and grilling chicken, the next we're longing for big bowls of pasta and soup. and while i won't be making this bowl of soup tonight - this chicken marsala risotto won out in the end - if this weather holds out, it might end up on the menu sooner than i think.

chicken cordon bleu soup
it's funny how people react to snow. last weekend, we got hit, just like everyone else on the east coast. i had plans friday to take the baby out for the day, but after watching six inches fall in the morning, i ditched them and stayed inside. mostly because i didn't want to deal with the other idiots driving around that don't realize you actually do have to drive differently when there's this much snow falling. by late saturday morning the snow stopped falling and it was absolutely beautiful outside. all the tree branches were covered in snow. it was picture perfect. other than having to be plowed out of our driveway, we weren't really affected. our power didn't go off, we didn't go to the grocery store to stock up, i didn't even bother getting out the flashlights.

secret recipe club: mushroom barley soup
i had a hard time choosing my recipe for this month's secret recipe club. jane at the heritage cook has hundreds of sweet and savory recipes, most of which look like something i would make at home. and i can totally get behind her "chocolate monday" feature. (marry that with alison's sweet tooth friday and the start and end of the week is covered!)
i had it narrowed down to three recipes - mexican black bean soup with cilantro lime sauce, triple layer lemon cake with lemon buttercream icing (for hubs, of course), and one of her two mushroom barley soups. i ultimately chose the mushroom barley soup because i didn't have the patience for the black bean soup this month, i had already made two layer cakes in the last four weeks and couldn't justify another, and the first and only time i made mushroom barley soup it came out far too thick. i've had every intention to remake it and as soon as i saw jane's version, i stopped looking for anything else!

44 clove garlic soup with chicken
i really hate to start it this way, but i'm sorry. i'm sorry deb, this garlic soup was just plain too garlicky for me. too garlicky for my garlic loving husband. this is the first and only recipe i've made from deb at smitten kitchen that was a bust for me. that said, i think there are a few ways to totally redeem this soup & it's on my radar to try again.

vegetable noodle soup
why yes, that is the may 2012 issue of bon apetit on my coffee table. and yes, my bookmark is on the editor's letter page, so i didn't make it very far. i'm a bit behind on my reading. i have a good 15 or so magazines that have piled up since last june (and apparently earlier) along with a few new cookbooks from christmas and my birthday. same thing goes for some of the posts saved in my google reader. which brings me to this soup: this soup has been sitting in my reader, starred, waiting for me to make it, since it was posted two and a half years ago. week after week it got pushed aside for something flashier. what a shame, considering how delicious, easy, and adaptable this soup is. and now that i have the last four pounds of baby weight to lose, this meatless soup may make it's way into our weekly rotation more often.

chicken (or leftover turkey) & tortellini soup
i hope everyone had a great thanksgiving. did you eat a lot of turk? if you're anything like my father, you have pounds and pounds and pounds of it left over. he cooks two turkeys. one the day before thanksgiving - specifically for sandwiches and leftovers - and one the day of to be served with dinner. earlier this week he told me he cut way back and only cooked 35 pounds of turkey instead of the 44 he cooked last year. 35 pounds of turkey for 12 adults. needless to say i never went hungry growing up.
so if you - like my dad - have pounds of turkey left over and are already getting sick of turkey sandwiches, i suggest this soup. it's painless to whip up, transforms turkey into something different, you probably have leftover carrots and celery from your thanksgiving feast anyway. and if you don't have spinach or mushrooms hanging out, then omit them. no big deal. don't have fresh tortellini? substitute egg noodles or broken spaghetti.

slow cooker tex-mex chicken stew
ah, martha, you almost got me again. for me, she's always been hit or miss. on one hand, my favorite basic yellow cake comes from martha stewart. her peach pie is out of this world. chicken & pearl couscous with tomato and lemon is one of the best meals i've had this year. and then there are the flops, which i also need to get better at documenting. these peanut butter swirled chocolate cupcakes sounded delicious but are far from it. and her one bowl chocolate cake? while not a disaster, i'd take ina's version over martha's any day.which brings me to this stew.

creamy chicken florentine soup
we spent the second to last weekend in september at barktoberfest, an annual fundraiser for lollypop farm, the humane society of greater rochester. we have gone the last four or five years, watching our team grow from four of us raising a couple hundred dollars to our friend susie raising thousands and gathering up a team of more than thirty! this year was especially fun since we brought baby winn with us.

cheesy potato soup with ham
i made this soup last month, when we had an abnormally rainy and cold day smack in the middle of the summer. now that fall has shown up with rain and cooler temperatures, it's a great time to bring soup back in the regular rotation. this soup is rich and creamy from the potatoes and cheese and perfectly salty with the ham. if you want a meatless meal, simply omit the ham. the only thing i will do differently next time: top with crispy bacon.

white bean & chicken chowder
yes, it's june. yes, it's warm out. but every year, there's always a week or two about now where summer sneaks away and we're left with cool, rainy days, and even cooler nights. filled with fresh vegetables, chicken, and cannillini beans, this chowder is perfect for one of those cool summer nights.
you aren't still buying your beans canned, are you? a couple years ago our good foodie friend chris picked up a small pressure cooker on clearance for us. ever since then, i ditched the cans and make beans in my pressure cooker. it's insanely simple and works well for black, cannellini, and kidney beans.

i know what you're thinking: hey kate, why is your soup purple? because i used purple cabbage. which dyed everything - except for the carrots - purple. even the green beans had a tinge of purple.

chicken, leek, & mushroom soup
this winter hasn't been very wintery but it hasn't stopped me from making one of my favorite winter foods: soup. and this year has been somewhat of a challenge to find soup that's both really good for you and chock full of protein to keep me and the baby full - and that's not chili. don't get me wrong, i love a good chili just as much as the next person, but all that meat and beans gets kind of repetitive after a while.
which brings me to this soup. full of leeks and mushrooms - two of my favorite vegetables - perfectly spiked with apples and vinegar, and finished off with heavy cream and chicken. with a hunk of warm bread, it makes a comforting dinner.

slow cooker chili
one of my unofficial new year's resolutions is to spend less time cooking. sound counter-intuitive? i'm all for spending hours in the kitchen, on occasion, to make great food, but during the week, i want good food, fast. a typical workday for us means we leave the house at 7:30 and get home by 6:30. and the days we stop at the gym after work, it's more like 7:30. the last thing i want to do is spend 45 minutes cooking on a monday night. which is why i'm on the lookout for shortcuts.
and a slow cooker is one of the best kept secrets (ok, maybe you already know how much of a time saver they are, and i'm finally jumping on the band wagon). i've heard it a million times from friends, family, and coworkers, but it's taken me a couple meals to really understand how great it is to spend 15 or less minutes preparing dinner. i love it. so much so, that i've added a slow cooker tag to my recipes so you can get to all of them even easier. even though there are only a few posted now, i hope to continue using mine about once a week.

tomato & meatball soup
don't let it's looks fool you. while this soup isn't much of a looker, it's packed with flavor. the meatballs are spiced really well and the soup is a pretty basic homemade tomato soup - sweetened up a touch with a bit of carrot and celery added. it's a really great winter soup.
and don't let the time fool you. sure, it took me a good 45 minutes to make it. but there's a 20 minute chunk of time right in the middle where the soup is simmering - which means you can wrap presents, watch a half an hour DVRd show, or just plain relax for that matter.

light & quick white chicken chili
i've been in kind of a food funk for the last month or two. where my google reader is typically busting at the seams every week with too many dinners, too many desserts, and too many snacks to make each week, lately it's been the opposite. few recipes have caught my attention and i've been mildly stuck in a rut of old standbys.
maybe it's the weather. we're stuck between 'is it still fall?' and 'is it finally winter?' at a time of year when the high is typically thirty degrees and we've already had a snow storm, we've had a full quarter inch of snow and the temperatures have stayed in the fifties, with no chance of going down. it's really odd. and throwing me off.
so to break the rut i've been in, i dug out a few old cook's illustrated special editions i picked up a couple months ago when borders was going out of business. which led me to a week's worth of new meals. starting with this easy & delicious white chicken chili. bonus that it's light and leftovers reheat perfectly.

shaker chicken noodle soup
the summer i left for my second year of college, my mom photo copied a few recipes for me. after all, i was out of the dorms and into my own apartment. there was homemade macaroni and cheese (perfected by my mom and her brother), my all time favorite mushroom bisque, a few cookie recipes from her betty crocker, held together by a rubber band, and this soup. all in all i have made this soup at least ten times - at least once every winter since.

slow cooker french onion soup with beef
i really need to get on the slow cooker bandwagon. what has taken me so long?! it all started with the chicken tacos i made a couple weeks ago - before vacations and conferences and weddings got in the way - and i realized the only thing better than eating a homecooked meal every night, is eating one that's been cooked while you were at work.
this time i tackled soup. french onion soup. one of my absolute favorite soups. i attempted a garlicky version a year and a half ago but have yet to master the original. this time i decided to let the slow cooker do the work of cooking down the onions and added beef. yes, i know beef is not traditionally in french onion soup, but around these parts, i knew i needed to add some meat to the soup to get a certain someone to at least try it.

vegetarian wild rice soup
if you remeber, back in december, i made a version of this soup with chicken. it was so good, so perfect for a cold winter night, that i declared it "one of the best soups i ever had." this version, a tweaked version of the other, is so good, i can't declare a winner. they're both at the top of the list.
