for this, my last and final <a href="http://secret-recipe-club.blogspot.com/">secret recipe club</a> choice, i first chose this <a href="http://dancingveggies.com/2010/08/oh-honey-honey.html">upside down peach cake</a> from amanda at <a href="http://dancingveggies.com/">dancing veggies</a>. amanda's blog is full of vegetarian recipes and i had never made a cake without eggs before. but i had a different, major problem. the last few cakes i've made, i've thought they were done, taken them out of the oven, just to cut into them later to find them gooey inside. this time, my cake wasn't even close to being done. and just like the other times, i didn't know until after i had turned it out, let it cool, and took out the first slice. what a bummer. the two inches around the outside edge were cooked & delicious. my advice to those of you want to make it: make sure it's really done. and if you aren't sure, bake it another five minutes. oh, and let it cool in the pan about 15 minutes before turning it out.</div>

1 1/2 cups all purpose flour </div>
<div style="text-align: justify;">
1/2 cup sugar</div>
<div style="text-align: justify;">
2 tablespoons brown sugar</div>
<div style="text-align: justify;">
1 teaspoon kosher salt</div>
<div style="text-align: justify;">
3/4 cup unsalted butter, cold & cut into pieces</div>
<div style="text-align: justify;">
2 tablespoons cold water </div>

for the peach layer:</div>

4 peaches, peeled, pitted & sliced</div>
<div style="text-align: justify;">

1 teaspoon vanilla bean paste (substitute vanilla extract)</div>
1/2 cup all purpose flour</div>
<div style="text-align: justify;">
1/2 cup vanilla sugar (substitute granulated sugar)</div>
<div style="text-align: justify;">

for the topping:</div>
<div style="text-align: justify;">
3/4 cup all purpose flour</div>
<div style="text-align: justify;">
<div style="text-align: justify;">
2 tablespoons vanilla sugar (substitute granulated sugar)</div>
<div style="text-align: justify;">
1 tablespoon brown sugar</div>
<div style="text-align: justify;">
1/2 teaspoon kosher salt</div>
<div style="text-align: justify;">
1/2 cup old fashioned oats </div>
<div style="text-align: justify;">
6 tablespoons unsalted butter, cold & cut into pieces</div>
<div style="text-align: justify;">
1 tablespoon vanilla extract</div>
<ol>
<li>preheat your oven to 350F. line the bottom of a 9x13" pan with parchment paper, leaving the sides hanging so the entire pan of bars can be lifted out once baked & cooled. set aside.</li>
<li>make the base. combine the flour, sugars, and salt. add the butter and mix with your hands, pastry blender, or low speed on an electric mixer until the butter is the size of coarse crumbs. add the water and mix until the dough just comes together. press the dough into the bottom of the prepared pan and bake for 10 minutes. leave the oven on & let the base cool for 10 minutes.</li>
<li>while the base is cooking & cooling, make the peach layer & topping. for the peaches, combine the peaches with the vanilla until combined. add the flour and sugar and mix until combined. set aside until ready to use. </li>
<li>to make the topping, combine the flour, sugars, salt, and oats. add the butter and mix with your
hands, pastry blender, or low speed on an electric mixer until the
butter is the size of coarse crumbs. add the vanilla extract and mix until the
dough just comes together. </li>
<li>once the base has cooked & cooled for about 10 minutes, spread the peaches out evenly on top of it. then, using your fingers, sprinkle the topping over the peaches. bake 40-50 minutes, or until the top is golden brown. let cool completely in the pan before removing via the parchment paper, cut into squares, and serve. </li>

before the kids were born, i had time to putz around and make a yeasty loaf of bread. now, not so much. as soon as i saw <a href="http://www.lorisculinarycreations.com/2014/01/easy-baked-bread-ready-hour/">this recipe promising fresh baked bread at home in an hour(!!!) </a>from lori at lori's culinary creations, i was set. the one thing it needed: a heavy dose of cinnamon and sugar.</div>

and it did not disappoint. i easily made two loaves of bread in about an hour with things i already had in my pantry. while the recipe below is written for two cinnamon swirl loaves, i decided to make one plain - to have with pasta the following night for dinner. to make plain loaves, skip forming the dough into rectangles (see step 2 below) and simply form it into loaves and skip the cinnamon sugar on top. delicious!<i><br /></i><br />

<b>1 hour cinnamon swirl bread</b><br />

1 hour, makes two small loaves<b> </b><br />
<br />
1 1/2 cups warm water<br />
1 1/2 tablespoons (or 1 tablespoon + 1 1/2 teaspoons) instant yeast<br />
1 tablespoon honey<br />
4 cups all purpose flour<br />
1 1/2 teaspoons salt<br />
1 teaspoon ground cinnamon + 1/4 cup granulated sugar, combined<br />
olive oil<br />
1/4 teaspoon ground cinnamon + 1 tablespoon turbinado sugar, combined <br />
<ol style="text-align: justify;">
<li>in the bowl of a stand mixer or large bowl, mix the warm water, yeast, and honey. let rest 15 minutes for the yeast to bloom. </li>
<li>once bloomed, add the flour and salt and mix with a dough hook or spoon until combined. knead with the dough hook or by hand for about five minutes, or until smooth. using floured hands, transfer the dough to a floured silicone mat or parchment paper on a baking sheet. divide in half. using your hands, roughly form each dough half into rectangles about 12" by 8". sprinkle each with about half of the cinnamon & granulated sugar. from the short end, roll each dough into a loaf and place back on the sheet. score the top of the loaves and cover with a dishtowel to rise for 20 minutes.</li>
<li>preheat your oven to 450F. coat the top of each loaf with olive oil and sprinkle liberally with the cinnamon & turbinado sugar. bake for about 15 minutes until golden brown, or until the inside is 200-210F. move to a cooling rack & cool completely. serve with honey butter.</li>

for this month's secret recipe club pick from cindy at <a href="http://www.hunwhatsfordinner.com/">hun...what's for dinner?</a>, i started my search looking for two things: a great weeknight dinner and a new cookie. as a result, these <a href="http://www.hunwhatsfordinner.com/2012/07/bbq-cola-beef-sandwiches.html">bbq cola beef sandwiches</a> almost made in into our rotation last week (i love using my slow cooker in the summer, and these sandwiches look perfect), along with <a href="http://www.hunwhatsfordinner.com/2012/01/peanut-butter-chocolate-chip-pretzel.html">these peanut butter, chocolate chip & pretzel bars</a> until i just so happened to stumble upon <a href="http://www.hunwhatsfordinner.com/2011/08/frozen-peanut-butter-cups.html">these frozen peanut butter cups</a> and the sandwiches and bars flew out the window! my initial thought was that the only thing these were missing was chocolate ice cream. i remedied that and made one of my favorite combos. </div>

pie serves 8-12, makes 1 cup hot fudge (enough for the pie & can be easily doubled to make 2 cups)</div>

i foolishly made this in a 9" tart pan. i highly suggest making it in a 8" or 9" pie plate, as the tart pan sides weren't as high as i would have liked. i really wanted to pour the hot fudge over the top of the finished pie and freeze it, but the fudge would have ran off the sides.<i></i></div>

i made this pie with layers of vanilla and chocolate ice cream. i bought a half gallon of ice cream with vanilla on one side & chocolate on the other mostly to save money and avoid having even more ice cream hanging around my freezer. feel free to use all chocolate, all vanilla, or any other kind that may be even more delicious. <i><br /></i></div>

it's up to you how you want to serve the hot fudge and nuts: you could pour the hot fudge over the entire finished pie, sprinkle with nuts and freeze, or leave it separate and serve with each slice, like i did. </div>

for the pie:</div>
<div style="text-align: justify;">
3/4 cup corn syrup, divided</div>
<div style="text-align: justify;">
3/4 cup creamy peanut butter, divided</div>
<div style="text-align: justify;">
3 cups corn flakes cereal</div>
<div style="text-align: justify;">
one half gallon ice cream total - see note above about ice cream flavors</div>
<div style="text-align: justify;">
salted peanuts, to serve </div>
<div style="text-align: justify;">
hot fudge, recipe below</div>
<ol style="text-align: justify;">
<li>to make the crust, grease the bottom of a 8" or 9" pie plate and set aside. </li>
<li>add 1/2 cup corn syrup to a medium glass or microwave safe bowl and microwave about 1 minute, or until hot but not bubbling. whisk in 1/4 cup peanut butter. mix in the cereal with a spoon and press into the bottom of the pie plate. place in your freezer for 10-15 minutes until cold. now is a good time to remove your ice cream from the freezer and let sit at room temperature for 10-15 minutes or until soft. </li>
<li>while you wait, combine the remaining 1/2 cup peanut butter and 1/4 cup corn syrup in a bowl. microwave about 30 seconds, or just until warm and it's easy to whisk them together. combine and set aside.</li>
<li>when the crust is cold and the ice cream has softened, scoop about 1/2 the ice cream into the crust and use a spoon to spread evenly. pour the peanut butter mixture over the top and use a spoon to spread. return the pie to the freezer for another 10-15 minutes, or until the peanut butter is frozen. if the rest of your ice cream is getting too soft, put it back in the freezer.</li>
<li>once the pie is frozen again, scoop the remaining ice cream on top of the peanut butter and use a spoon to spread evenly. if you plan to drizzle each slice with hot fudge when you serve it,
wrap tightly with plastic wrap and freeze until ready to serve. if you plan to freeze the pie covered in hot fudge, freeze the pie for another 10-15min, cover in hot fudge, freeze 10-15min, then cover tightly with plastic wrap and freeze until ready to serve. <i><br /></i></li>

<li>whisk the cream, sugar, cocoa, and corn syrup in a saucepan. bring to a boil over medium high heat, whisking constantly for about 30 seconds. </li>
<li>remove from heat, add the chocolate, and whisk until smooth. </li>
<li>add the butter, salt, and vanilla and mix until smooth. store leftovers in the refrigerator. <i><br /></i></li>

for this month's secret recipe club pick at <a href="http://www.myhobbielobbie.com/">my hobbie lobbie</a>, i had a couple recipes picked out: <a href="http://www.myhobbielobbie.com/2013/08/baked-fish-in-mushroom-sauce.html">baked fish in mushroom sauce</a> [i'm always on the lookout for simple, delicious ways to prepare fish, and mushrooms are always a hit in this house], <a href="http://www.myhobbielobbie.com/2013/05/savory-french-toast-my-first-post-for.html">savory french toast</a> [think baked french toast casserole with peppers, onions, and cheese], <a href="http://www.myhobbielobbie.com/2011/04/monster-cookies.html">monster cookies</a> [chocolate chips + peanut butter + oats + M&Ms] and <a href="http://www.myhobbielobbie.com/2010/10/week-4-of-12-weeks-of-christmas-cookies.html">these totally chocolate chocolate chip cookies</a> [melted chocolate & cocoa in the batter with dark chocolate chips mixed in]. i woke up one saturday morning all ready to make the savory french toast, when i realized i was missing one - arguably <i>the </i>- key ingredient: bread. so i settled - if i can even call it settling, when so much chocolate is involved - on the totally chocolate chocolate chip cookies. the only change i made was to convert the ingredients from metric to US measurements using my kitchen scale & i added a sprinkle of sea salt to the top of half the cookies. i loved the salt, jason didn't care for it, but we all agreed the cookies are delicious. </div>

45 minutes, makes 2 dozen cookies</div>

for extra large cookies, scoop about 1/4 cup of dough and bake 16-18 minutes. </div>
<div style="text-align: justify;">

12 ounces (about 2 cups) dark chocolate chips </div>
<div style="text-align: justify;">
9 tablespoons (1 stick + 1 tablespoon) unsalted butter, room temperature </div>
<div style="text-align: justify;">
1/4 cup packed brown sugar</div>
<div style="text-align: justify;">
1/4 cup white sugar</div>
<div style="text-align: justify;">
1 teaspoon vanilla extract</div>
<div style="text-align: justify;">
1 egg</div>
<div style="text-align: justify;">
1 cup flour</div>
<div style="text-align: justify;">
1/4 cup cocoa powder</div>
<div style="text-align: justify;">
1/2 teaspoon salt </div>
<div style="text-align: justify;">
1 teaspoon baking powder</div>
<div style="text-align: justify;">
sea salt for topping </div>
<ol style="text-align: justify;">
<li>preheat your oven to 350F and line a baking sheet with parchment or a silicone baking sheet & set aside.</li>
<li>melt 3/4 cup chocolate chips in your microwave or in a double boiler just until melted.</li>
<li>cream the butter, brown sugar, and white sugar with a mixer until light and creamy, about 5 minutes. add the melted chocolate and mix until combined. </li>
<li>add the vanilla and egg and mix until combined. </li>
<li>add the four, cocoa, and salt and mix until combined. mix in the chocolate chips. </li>
<li>scoop dough into balls about 1 1/2 tablespoons in size (i use <a href="http://www.amazon.com/OXO-Grips-Medium-Cookie-Scoop/dp/B0000CDVD2">this cookie scoop</a>) and place on the baking sheet. sprinkle with sea salt. bake 11-12 minutes for chewy cookies and 13-14 minutes for crispy cookies. cook on the baking sheet for a few minutes before transferring to a wire rack to cool completely. </li>

as i mentioned last week, i almost forgot that <b>tuesday </b>was cinco de mayo! we eat a lot of mexican around here, so i wanted to make something different. these <a href="http://www.foodiecrush.com/2012/09/avocado-cream-and-chicken-suiza-enchiladas-recipe/">avocado chicken suiza enchiladas</a> were delicious. this took me about 40 minutes to make - a little long for a weeknight dinner, but oh so worth it. </div>

my sister, brother in law, and niece were visiting my parents this weekend, so i packed up the boys <b>thursday </b>and headed to grandma & grandpa's for the night. it was really warm outside, so dad grilled cheeseburgers, with beans and salt potatoes. we topped it off with a big chocolate layer cake for my brother in law's birthday. not a bad way to start the summer grilling season!</div>

i spent my mother's day sunday doing all the things i love: yoga in the morning, reading a magazine & coffee outside on the patio, a bike ride with winn (we just missed a storm by about 5 min), and dinner with the boys. jason made these <a href="http://www.thekitchn.com/recipe-slow-cooker-black-bean-enchiladas-dinner-recipes-from-the-kitchn-127016">black bean enchiladas</a>, baking them in a 400F oven for 45 minutes instead of slow cooking them. they were good & definitely something i'll slow cook this winter.</div>

i had already made my grocery list and planned my meals for this week when i realized two things: i totally forgot that it's time for the <a href="http://secret-recipe-club.blogspot.com/">secret recipe club</a> again and this week is cinco de mayo! i had browsed<a href="http://blog.rachelcotterill.com/"> rachel cotterill's blog</a> and bookmarked a few recipes right when i got my assignment, not even thinking about mexican food. once i realized my blunder, i read through the list i had bookmarked and easily chose this <a href="http://blog.rachelcotterill.com/2013/08/mexican-inspired-macaroni-cheese.html">mexican mac and cheese</a>! while not spicy, it went over really well in our house with a toddler and preschooler. for dessert, i made one of my favorite combinations: almond and raspberry in <a href="http://blog.rachelcotterill.com/2011/05/bakewell-tart-recipe.html">this bakewell tart</a>. i knew the tart would taste great, but both jason and i were surprised at how light it is. i assumed the almonds would make a heavy, dense cake, but that couldn't be farther from the truth. and while rachel and i don't have much in common besides food - she's a computational linguistics PhD student, declares she's "someone who collects skills the way other people collect stamps", and she has written two fantasy novels - there's no doubt that we both share a love of food.</div>

while delicious, this mac & cheese is definitely missing the heat you typically expect from mexican dishes. my suggestion: add 1 diced jalapeno with the pepper and onion in step 2, add 4 ounces canned diced green chilis in step 5, or add chili powder to taste in step 5. try one or all three for killer heat!</div>
<br />
8 ounces small shaped pasta, like macaroni, rotini, or small shells<br />
4 cloves garlic, crushed<br />
1 bell pepper, diced<br />
1 small onion, diced<br />
5 green onions, white and light green parts sliced<br />
1 cup frozen corn<br />
2 tablespoons unsalted butter<br />
7 tablespoons flour <br />
1 1/2 cups 2% or whole milk<br />
1/2 teaspoon cumin<br />
1/2 teaspoon smoked paprika<br />
1 cup shredded cheddar cheese<br />
1 cup frozen corn <br />
<ol style="text-align: justify;">
<li>cook the pasta in salted water just until al dente, or the shortest time listed on the package. drain and set aside.</li>
<li>while the pasta is cooking, make the sauce. coat the bottom of an ovenproof dutch oven or large saucepan with olive oil and place over medium heat. add the garlic and cook until the garlic starts to soften. do not let the garlic brown. remove the garlic from the pan and add the bell pepper, onion, and green onions. cook until soft, about 5 minutes. mince the cooked garlic and add it back to the pan with the pepper & onions. </li>
<li>if you wish to bake the finished mac & cheese, preheat your oven to 400F.</li>
<li>add the butter to the vegetables. once melted, whisk in the flour. cook, whisking constantly, for about 1 minute, or until the flour starts to brown. slowly whisk in the milk and cook until thickened, about 1 minute.</li>
<li>whisk in the cumin, paprika, and cheddar cheese. mix in the corn and drained pasta until combined. </li>
<li>serve as is or bake uncovered 15-20 minutes or until the top is lightly brown.

1hr, makes 9" tart<br />
<br />
for the bottom:<br />
3/4 cup + 2 tablespoons flour<br />
1/4 cup powdered sugar<br />
5 1/2 tablespoons butter, chilled<br />
1 egg<br />
about 2 tablespoons water<br />
<br />
for the filling:<br />
1 1/4 cups powdered sugar<br />
7 tablespoons butter, room temperature<br />
3 eggs, room temperature<br />
1 teaspoon almond extract<br />
1 1/3 cups ground almonds<br />
about 6 tablespoons good quality raspberry jam<br />
about 1/4 cup sliced almonds<br />
<br />
<ol style="text-align: justify;">
<li>to make the bottom, whisk the flour and sugar together. using your hands or a pastry blender, cut the butter into the flour mixture until it resembles coarse crumbs. separate the egg yolk & white, reserve the white for the filling, and add the yolk to the butter mixture. use a fork to mix in the yolk. add 1 tablespoon water and mix until combined. if the mixture is still dry, add another tablespoon of water. you may need to bring the mixture together with your hands. kneed lightly, shape into a disc, and chill for 30 minutes. </li>
<li>preheat your oven to 400F and grease the bottom and sides of an 9" round cake pan. roll out the chilled dough to fit the bottom of the pan. line the pan with the dough and use your fingers around the edges to push it down from the sides. prick the dough and blind bake with beads, rice, etc, for 15 minutes. remove the beads, rice,etc, and brush the top with milk. bake an additional 5 minutes. reduce your oven temp at 350F.</li>
<li>while the bottom is baking, make the filling. mix the sugar and butter together until light and fluffy, about 5 minutes. add the eggs and almond extract and mix until combined. fold in the ground almonds.</li>
<li>spoon the jam evenly over the baked pastry bottom, leaving a small space between the jam and sides of the pan. pour the filling over the top and spread evenly. bake for 15 minutes. sprinkle the top of the tart with the sliced almonds and bake an additional 15 minutes. cool almost completely before serving. </li>

the weather today was perfect - warm, sunny, and too early in the season for bugs or humidity. we packed up our dinner and headed to the playground for dinner. after gobbling up eggs baked with bacon, potatoes, and a ton of cheese, we walked about a mile along <a href="http://www.eriecanal.org/">the canal</a> for opening day at the ice cream shop. we marked the occasion with winn's very own ice cream. i wasn't surprised in the least at his choice of chocolate.</div>

1/4 pound bacon, cut into 1/2 inch wide pieces<br />
1 onion, diced<br />
1 bell pepper, diced<br />
4 cloves garlic, minced<br />
8 eggs<br />
1 cup 2% or whole milk<br />
2 cups shredded cheddar cheese<br />

<li>preheat your oven to 350F. </li>
<li>heat a large skillet or dutch oven over medium heat and add the bacon. cook until very crisp. remove from heat.</li>
<li>use some of the rendered bacon grease to grease a 9x13" baking dish. drain all but about a tablespoon of the bacon grease from the bacon and return the pan to the heat. </li>
<li>add the onion, pepper, and garlic. season with salt and cook over medium heat until the vegetables are soft, about 5 minutes. remove from heat.</li>

<b>bacon wrapped pork tenderloin</b><br />
adapted from <a href="http://www.thekitchn.com/recipe-baconbrown-sugar-pork-tenderloin-recipes-from-the-kitchn-215660">the kitchn </a><br />
30 minutes, serves 4<br />
<br />
1 pork tenderloin<br />
4-6 slices thick cut bacon <br />
3 tablespoons brown sugar<br />
2 teaspoons kosher salt<br />
1/2 teaspoon paprika<br />
1/4 cup apricot preserves<br />
1 tablespoon whole grain mustard<br />
1 tablespoon dijon mustard<br />
<ol style="text-align: justify;">
<li>preheat your oven to 350F. combine brown sugar, salt, and paprika in a small bowl and set aside.</li>
<li>get your bacon out of the package and set aside. you will need about 8 toothpicks to secure the bacon in the pork - set those aside and ready to go also.</li>
<li>remove the silverskin from the pork tenderloin and pat the pork dry with a paper towel. rub the sugar mixture into the pork. wrap the bacon around the pork and secure the ends and sides with toothpicks.</li>
<li>coat the bottom of an ovenproof skillet large enough to hold the pork with vegetable oil. place over medium high heat. once heated, add the tenderloin and sear about 5 minutes or until the bacon is browned and crispy. flip the pork and brown the other side for another 3-5 minutes. </li>
<li>while the pork is browning, mix the apricot preserves and mustard until smooth. once the pork is browned, remove the pan from the heat, and spread the apricot mixture over the top of the pork. transfer the skillet to the oven.</li>
<li>bake about 10 minutes, or until the pork is 140F. remove from the oven - careful, the handle is hot! - and tent with foil and rest for about 10 minutes. remove the toothpicks and slice and serve. </li>

i do all of my meal planning wednesday night/thursday morning for the following week and then shop with the boys thursday morning. lately, i've been assuming we have ingredients, never bothering to check when i'm making my grocery list, only to learn halfway through cooking something, that i'm missing a key ingredient or two. so was the case on <b>monday </b>when i made this <a href="http://www.pink-parsley.com/2014/04/skillet-baked-tex-mex-skillet-macaroni.html">tex-mex skillet pasta.</a> this time, we were out of corn and cilantro. it was still delicious, and will be made again with corn, cilantro, and black beans. <b>tuesday </b>we had the leftovers.<br />

sometimes, a basic sauteed chicken breast is perfect for dinner. <b>wednesday </b>we had ours with peas and garlic butter orzo.<br />
<br />
<b>thursday </b>was rainy and cool, a great day for one of jason's favorites:<b> </b><a href="http://www.number-2-pencil.com/2013/01/01/dr-pepper-chili/">dr pepper chili. </a>over the winter, we had this chili at least twice a month. it's that good. <br />

i spent the majority of <b>friday </b>afternoon getting ready for roo's birthday part on saturday. since neither of the boys wanted to take a nap, i was anxious about getting everything done and did not want to add making dinner to the list. jason and winn headed off to <a href="http://dibellas.com/">dibella's</a> for subs. i forgot how good they are! <br />
<br />
<b>saturday </b>we celebrated roo's first birthday with brunch and <a href="http://kitchentrialanderror.blogspot.com/2015/04/petite-white-layer-cake.html">even more cake</a>! (more on that later.) my parents stayed for dinner, so we broke out the grill for the first time this year & had cheeseburgers to go along with what little brunch leftovers remained. <br />

my kids love fish, but i was getting bored with basic baked tilapia, so this <b>sunday </b>we had<b> </b><a href="http://www.myrecipes.com/recipe/tilapia-lemon-garlic-sauce">tilapia with lemon garlic sauce</a> and brown rice. it was a hit!<br />

ever since <a href="http://www.foodandwine.com/recipes/sweet-and-sour-pork-in-lettuce-cups">this recipe first showed up in food & wine</a> over a year ago, it's been on heavy rotation in our house. the first couple times we enjoyed it as is - sweet & sour pork lettuce cups, the mixture rolled in butter lettuce - and we quickly learned that although delicious, it simply wasn't enough food to sustain all of us. so i started making variations - first lettuce cups topped with rice and then this, our favorite - sweet & sour pork with rice on top of baby spinach. </div>

30 minutes, serves 4-6 <br />
<br />
1 cup white rice <br />
1 small onion, chopped<br />
2 cloves garlic, minced<br />
1 pound ground pork<br />
2 tablespoons honey<br />
1 tablespoon asian fish sauce<br />
1/2 teaspoon sesame oil<br />
zest & juice of one lime<br />
2-3 scallions, thinly sliced <br />
6 ounces baby spinach <br />
<ol style="text-align: justify;">
<li>cook the rice according to the package directions. set aside. </li>
<li>while the rice cooks, make the meat mixture. coat the bottom of a skillet with vegetable oil and place over medium heat. add the onion and cook until soft, about 5 minutes. add the garlic and cook until fragrant, about 30 seconds. add the pork, turn the heat up to medium-high, and cook until browned, but not cooked all the way through, about 3 minutes.</li>
<li>add the honey, fish sauce, and sesame oil and stir until combined. cook until the meat is cooked through, about 3 minutes.</li>
<li>remove the skillet from the heat & stir in the lime zest and lime juice. season with salt and pepper to taste. </li>
<li>layer the salad: cover the bottom with a handful of baby spinach, then a scoop of white rice, about a quarter of the pork mixture, and top with scallions. serve hot.</li>

late thursday night jason mentioned that i hadn't made and we hadn't eaten risotto in a while. i had originally planned to make this <a href="http://www.thekitchn.com/recipe-minnesota-wild-rice-mushroom-soup-recipes-from-the-kitchn-164295">wild rice & mushroom soup</a> for dinner <b>friday</b>. since i already had mushrooms in the fridge and vegetable stock in my pantry, i switched it up and made mushroom risotto - adapting this <a href="http://kitchentrialanderror.blogspot.com/2011/06/portobello-risotto.html">portobello risotto</a> by substituting creminis for portobellos. it was good and i've never met a toddler or a preschooler that hates rice.</div>

the top layer sliding ever so slightly, this is a total mom cake. i'm pretty sure the first time i celebrated my birthday with a store bought cake was when i turned 19. it was the first year i spent my birthday away from my mother and her homemade cakes. my mom recently reminded me how much my sister and i begged for a store bought cake as kids - which while i don't remember this specifically, i'm not all that surprised that it happened - and then thanked her as adults for always making our cakes. to this day, my mom's layer cakes never look the best - always a <a href="http://kitchentrialanderror.blogspot.com/2012/01/bakeds-sweet-salty-cake-12in2012.html">little lopsided</a>, one layer sliding off another - but no bakery cake can compare to the flavor of a homemade cake.</div>

makes a two layer six inch cake, serves 8<br />

to make a two layer 8" or 9" cake, double all of the ingredients for the cake & follow the same method. bake the cakes about an additional 5 minutes. also double all of the ingredients for the buttercream & follow the same method.</div>
<br />
for the cake:<br />
2 egg whites<br />
1/2 cup whole milk, divided<br />
1/2 teaspoon vanilla extract<br />
1/2 teaspoon almond extract <br />
1 1/2 cups cake flour<br />
3/4 cup sugar<br />
2 teaspoons baking powder<br />
1/4 teaspoon salt<br />
2 tablespoons unsalted butter, room temperature<br />
4 tablespoons shortening, room temperature<br />
<br />
for the vanilla buttercream:<br />
1/2 cup (1 stick) unsalted butter, room temperature<br />
3-4cups powdered sugar<br />
1/4 cup milk<br />
1 teaspoon vanilla extract<br />
<ol style="text-align: justify;">
<li>preheat your oven to 350F. grease two 6 inch round cake pans and set aside. </li>
<li>in a small bowl, whisk the egg whites, 2 tablespoons milk, and vanilla & almond extracts and set aside.</li>
<li>in a large bowl, combine the flour, sugar, baking powder and salt and mix until combined. add the butter and shortening and mix with a mixer until combined. add the remaining milk (1/4 cup + 2 tablespoons) and mix on medium speed for about 3 minutes. the mixture will be quite thick. add the egg white mixture and mix for about 1 minute until the mixture is smooth. </li>
<li>divide the batter equally among the cake pans and bake for 20-25 minutes, or until a toothpick comes out clean. cool in the pan on a cooling rack for 10 minutes. turn the cakes out of the pans and cool completely before frosting.</li>
<li>to make the vanilla buttercream, add the butter, 2 cups sugar, milk, and vanilla extract, and beat on medium speed for 3-5 minutes or until combined. add remaining sugar, 1/2 cup at a time, beating on medium speed for 2 minutes after each addition, until spreading consistency.</li>
<li>if your cakes are domed (not flat), use a sharp serrated knife to cut off the domed part to make the cake tops flat. place one cake on the bottom of your serving platter, top with a hearty dollop of icing, and spread. add the top cake layer & frost the cake with the rest of the frosting. decorate as you desire. </li>

last summer, virtually every friday, i would pack up dinner for the then three of us and winn, roo, and i would visit a local playground for the afternoon. jason would meet us after he got out of work around 5:30. we'd play for a bit more and when we finally decided we're hungry, spread out our picnic dinner. we spent the summer visiting a dozen or so playgrounds, getting to know our favorites and a few we won't be visiting again, and finding dinners suitable for adults and toddlers that are also easily packable, delicious, and not repetitive. it was a challenge. so this summer, i'm going to track those dinners, along with their toddler and preschool friendly versions, since i know from experience the challenge it can be to find a picnic meal to satisfy young ones and adults. </div>

over the last week, our weather finally broke, giving us a couple days of 65+ degree mostly sunny weather. yesterday was a particularly nice day - 70+ and sunny all afternoon. winn asked if we could restart our playground dinners and we were happy to oblige. the weather didn't hold out - by the time we got to the playground, my weather app showed we were already in the blue rain area and the green was coming toward us, the sky was overcast, and the temp had dropped at least 15 degrees. we played anyway. and an hour later, when winn pleaded to eat dinner there, we did, hoping to outlast the rain. we were lucky - at 7:00 when we were the last ones to leave the playground, no rain had yet to fall.</div>

this last week was unique for us as i was home alone with roo <b>tuesday through sunday </b>afternoon. jason & winn spent five days & nights with jason's mother, out of state. since it was just me and roo for most of the week, i made simple, quick meals that the both of us liked. one night it was pasta with roasted vegetables and tomato sauce. another we had scrambled eggs, black beans, and bananas - three of roo's favorite foods. the rest of the evenings we had more easter leftovers, yogurt, fruit, cheese, hummus & soft pitas, and other things i typically have for a quick lunch at work.</div>

i've spent the last five days and nights alone with the baby while jason and winn were out of town, visiting grandma. like most parents, i had visions of all the things i would get done with only one child under my feet - and one that cannot yet talk! or run! or break things! visions of clothes shopping. visions of painting the now guest room in our house as a surprise to my husband when he comes home today (surprise! i didn't do it). visions of putting a sizable dent in my stack of magazines, some of which date back to 2013. visions of cooking - oh the cooking! you don't even want to see my wish list for the last two days. and i was going to do all of this plus get back on track with my half marathon training by running for an hour or so each day. </div>

to say i was delusional is an understatement. i gave in sometime early friday afternoon and let it be what it is - a great few days for me to spend one on one time with roo, which i haven't done since maternity leave ended and i went back to work last august. to say he's an entirely different person since then is another understatement. somehow, sometime in the last few months, while i was busy with his attention getting brother, roo made the switch from a baby to a kid. a kid who can stack a couple blocks, put the little people in the barn, roll trains and cars across the floor. cook in our play kitchen. bang tools on our play tool bench. a kid who can point to things in books and try to tell me about them. don't get me wrong, this isn't all a complete shock to me, but in reality, his louder, more dramatic brother usually gets my attention - and mostly because i'm trying to make sure he doesn't hurt himself, his brother, or break something. hopefully other parents can relate to this. long story short: while i've been saying and thinking i'm the parent of a toddler and a baby, in reality, winn has not been a toddler for a while and clearly roo is not a baby. i am now the parent of a preschooler and a toddler. somehow i blinked and landed here. and it's great.</div>

this dutch baby is one of the few things that was on the list and i actually made while it was just the two of us. ready in 30 minutes and loaded with eggs, one of roo's favorites, this went over as well as the <a href="http://kitchentrialanderror.blogspot.com/2015/04/one-pot-tortellini-with-meat-sauce.html">one pot tortellini</a>. </div>

<b>strawberry dutch baby</b><br />
adapted from <a href="http://www.two-tarts.com/2012/03/oven-puffed-pancake-with-berries.html">two tarts</a><br />
20 minutes, serves 4-8<br />
<br />
1 cup strawberries<br />
3 eggs<br />
1 cup milk<br />
1 teaspoon vanilla extract<br />
3/4 cup flour<br />
1/2 teaspoon salt<br />
3 tablespoons unsalted butter <br />
powdered sugar & real maple syrup for finishing & serving<br />
<ol style="text-align: justify;">
<li>place a 10" skillet in your oven and preheat it to 450F (you want the pan to be hot when the batter goes in).</li>
<li>wash & slice the berries while the oven preheats. </li>
<li>to make the batter, whisk the eggs, milk, and vanilla. add the flour and salt and whisk until smooth.</li>
<li>by now your oven should be preheated. when it is, remove the skillet, add the butter, and return the skillet to the oven for about 1 minute, or until melted and starting to bubble.</li>
<li>add the batter to the pan and sprinkle the berries evenly on top. bake for about 12 minutes, or until the sides are light brown.</li>
<li>run a spatula all the way around the pan and the bottom to loosen the pancake from the pan. carefully slide the pancake onto a serving platter. dust with powdered sugar & serve each wedge with a drizzle of real maple syrup. store leftovers in the refrigerator. </li>

with daylight savings time now in full force and the sun setting later and later, we're making a conscious effort to get the boys to sleep earlier. which means i am on the lookout for simple meals appropriate for adults, a toddler, and a finger-foods-eating baby that can be on the table from start to finish in a max of 30 minutes. most one pot pasta recipes i've tried fit these requirements, but don't always taste great or usually, don't have enough liquid and i end up with too hard pasta and burnt sauce. not good. this one pot tortellini is not one of those meals. while the three of us gobbled it up with our forks, the finger-foods-eating baby was the clear winner: we had to cut him off after three bowls. </div>

<b>one pot tortellini with meat sauce</b><br />
adapted from <a href="http://www.yellowblissroad.com/one-pot-tortellini-sausage-tomato-cream-sauce/">yellow bliss road</a><br />
30 minutes, serves 4-6<br />
<br />
1 pound lean ground beef<br />
1 small or medium onion, diced<br />
20 ounces fresh tortellini (check your grocer's refrigerated section)<br />
28 ounces diced tomatoes<br />
1 cup chicken broth<br />
2 tablespoons cream cheese<br />
2 cups shredded cheddar cheese<br />
<ol style="text-align: justify;">
<li>cook the ground beef in a large skillet over medium heat until most of the pink is gone. add the onion and continue cooking until the meat is cooked through. drain fat from the pan. </li>
<li>return the pan to medium-high heat and add the tortellini, tomatoes and chicken broth. season with salt & pepper and bring to a boil. turn the heat down to low, cover, and simmer until the pasta is cooked, 12-15 minutes. </li>
<li>turn off the heat and stir in the cheeses. cover and let stand for about 5 minutes and mix until thoroughly combined. serve hot.</li>

<a href="http://kitchentrialanderror.blogspot.com/2015/04/real-eats.html">i mentioned early this week</a> that we hosted some friends with little ones for an easter egg hunt and brunch last saturday morning. this carrot cake was the first dish i knew would be on the menu as my mom has made it a handful of times for various birthdays, holidays, and saturdays. it's the perfect cake for a party - it's easy, coming together in basically one bowl and no fussy layers, delicious, fitting for easter and springtime, and i felt a little less guilty letting my toddler have a piece knowing there are carrots tucked inside. oh and i've yet to meet a person that doesn't like carrot cake.</div>

it or not we had leftovers, which went to work with me for our office.
we are a staff of roughly a dozen, and like most offices, our kitchen
area is where many of us often bring in leftover treats from home to
share with the rest. when i went in to heat up my lunch at noon, i
noticed there was one piece of cake left and egged two of my coworkers
to eat it. one already had a piece, the other - the newest, who joined
our team around christmas - asked me a few questions - did i make it?
what kind of cake it is? how much is a piece? how much?! i asked her and
quickly told her the cake was free to anyone who wanted it. she saw my
note on top "carrot cake with cream cheese frosting (nut free)" and
thought it said "carrot cake with cream cheese frosting (not free)".
needless to say, the piece was on her plate and a forkful in her mouth while the other two of us were having a good laugh.<b> </b></div>

<b>simple carrot cake with cream cheese frosting</b><br />
adapted from <a href="https://www.cooksillustrated.com/">cook's illustrated</a><br />
makes 9x13" cake<br />

a note on cream cheese for the frosting. full fat cream cheese will make a frosting thick enough to spread on the sides of the cake. low fat cream cheese or neufchatel will make a thinner frosting that won't hold up to being spread on the sides - see my pictures, i used neufchatel and simply poured the frosting over the top of the cake and spread it around a bit with an offset spatula. </div>
<br />
for the cake:<br />
2 1/2 cups flour<br />
1 1/4 teaspoons baking powder<br />
1 teaspoon baking soda<br />
1 1/4 teaspoons cinnamon<br />
1/2 teaspoon nutmeg<br />
1/8 teaspoon ground cloves<br />
1/2 teaspoon salt<br />
1 cup brown sugar<br />
1 cup granulated sugar<br />
4 eggs<br />
1 1/2 cups vegetable oil<br />
1 pound carrots, peeled and shredded/grated <br />
<br />
for the frosting:<br />
8 ounces cream cheese or neufchatel, softened <br />
5 tablespoons unsalted butter, softened<br />
1 tablespoon sour cream<br />
1/2 teaspoon vanilla extract<br />
1 1/2 cups powdered sugar<br />
<ol style="text-align: justify;">
<li>preheat your oven to 350F. grease the bottom of a 9x13" pan. if you want to flip the cake out of the pan to serve, line the bottom with parchment paper also. set aside.</li>
<li>to make the cake, sift or whisk the dry ingredients together in a large bowl - flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt.</li>
<li>in the bowl of your food processor, add the sugars and eggs and blend until smooth and frothy, about 20 seconds. with the machine running, slowly add the vegetable oil and blend until smooth, about another 20 seconds.</li>
<li>add the suagr-egg mixture and carrots to the dry ingredients and mix until combined. spread the batter around evenly in your prepared pan. bake for 35-40 minutes, or until a toothpick comes out clean. cool completely in the pan for about 2 hours before flipping out, if you choose. if you flip the cake out of the pan, remove the layer of parchment paper from the bottom.</li>
<li>while the cake cools, make the frosting by combining all of the ingredients and mixing until smooth. ice the cooled cake with the frosting. </li>

while the recipe i chose goes back more than five years, it was a pretty easy choice. we have a few good mexican restaurants near us and while i usually get tacos when we go out, whenever we get to <a href="http://www.salenas.com/">salena's</a>, jason and i always get the mexican flag - three enchiladas, one red, one white, one green. i stopped dead in my tracks when i spied leslie's <a href="http://www.lacocinadeleslie.com/2009/12/enchilada-twosday.html?spref=pi">red and green chicken enchiladas </a>and decided that since <a href="http://kitchentrialanderror.blogspot.com/2011/02/cooks-illustrateds-chicken-enchiladas.html">i had made red enchiladas a couple years ago</a>, that it was time to try green.</div>

we were not disappointed even a tiny bit. these are so good, my almost one year old son stuffed a whole enchilada down before i could even serve myself. and then repeated it with leftovers two days later.</div>

not only are they delicious, they were easy to make. i had never cooked with tomatillos or poblanos before and learned a great trick to make the tomatillos easy to peel (thanks google!): put the husked tomatillos in a bowl of warm water and submerge for about 5 minutes. once the husk is soaked, it peels right off in a few big pieces. this saved me a ton of time.</div>

<b>green chicken enchiladas</b><br />
adapted from <a href="http://www.lacocinadeleslie.com/2009/12/enchilada-twosday.html?spref=pi">la cocina de leslie</a><br />
makes about 12 enchiladas, serving 4-6 people<br />
<br />
for the chicken filling:<br />
1 pound cooked chicken, shredded<br />
1/2 medium onion, finely diced<br />
1 cup sour cream<br />
<br />
for the sauce:<br />
1 pound tomatillos<br />
2 poblano peppers<br />
1/2 medium onion, cut in half<br />
1 clove garlic<br />
1-3 cups chicken stock <br />
<br />
to assemble:<br />
about 12 small flour tortillas<br />
about 8 ounces (or 1/2 pound) queso fresco cheese, crumbled<br />
about 1 cup shredded oaxaca cheese - if you can't find it, sub monterrey jack<br />
<ol style="text-align: justify;">
<li>preheat your oven to 350F.</li>
<li>to make the filling, mix the chicken, onion, sour cream and season with salt and pepper. set aside.</li>
<li>to make the sauce, roast the vegetables in a large skillet over medium heat until the tomatillos are soft and the poblanos have a few charred, black spots. if your tomatillos have any burned spots, rub them lightly with the tines of a fork and they will come right off. add all of the vegetables to a food processor and pulse until smooth. add 1 cup chicken stock and pulse until smooth. add chicken stock, a small amount at a time, blending after each addition, until the sauce is the consistency of pea soup. pour the sauce into a bowl large enough to submerge a tortilla.</li>
<li>to assemble, coat the bottom of a 9x13" pan with sauce. submerge a tortilla in the bowl of sauce and add about 2 tablespoons of chicken filling and about 1 tablespoon of queso fresco. roll up the tortilla and place it in the pan. repeat with the remaining tortillas until all of the filling is used up. spread any remaining sauce over the rolled up enchiladas. cover with shredded cheese. </li>
<li>bake 40-45 minutes, until the sauce is bubbly and the cheese is starting to brown. let sit 5-10 minutes to cool slightly and set before serving. </li>

<b>monday </b>we had leftover roast chicken with roasted sweet potatoes & <a href="http://ellysaysopa.com/2014/04/17/creamy-garlic-shells/">creamy garlic shells</a>. when i was a kid, i very vividly remember eating the garlic shells from a packet at the grocery store with our dinner. i liked them so much, i cooked them for my roommates and i when we lived in our apartment in college. this homemade version is just as quick with a couple easy steps to make them totally from scratch. </div>

<b>tuesday </b>was this <a href="http://www.thekitchn.com/recipe-baconbrown-sugar-pork-tenderloin-recipes-from-the-kitchn-215660">bacon wrapped roast pork</a> (the kitchn) with peas leftover garlic shells. this is the second time i've made this pork in almost as many weeks. it was delicious both times. and came together quickly enough to make it on a weeknight!</div>

a couple weeks ago i stocked up on sausage when it was on special at wegmans. tossed with jarred pasta sauce and whole wheat rotini, the roasted garlic and italian herb sausage made a delicious dinner on <b>wednesday. </b>simple, quick, flavorful, and leftovers reheat wonderfully. </div>

<b>thursday through saturday</b> nights were spent out of town visiting my parents. we feasted on trader joe's ravioli, fried fish at <a href="http://brixpubaria.com/">brix </a>in cortland, homemade corned beef & vegetable soup, easter sugar cookies made from my mother's betty crocker cookbook that's older than me, and homemade meyer lemon budino. </div>

breakfast for dinner is always a hit at our house and the boys especially love scrambled eggs. <b>sunday</b> night was breakfast burritos to order - mine with black beans, eggs, cheese, avocado, and taco sauce; jason's the same minus avocado; winn's separate on his plate; and beans, cheese, and avocado for the baby. i made extra eggs and beans & bought enough tortillas to make extra burritos for jason and i to have for breakfast this week. </div>

juice + zest of 1 meyer lemon</div>

1/4-1/2 pound bacon</div>

<li>cook the bacon on the stove top or <a href="http://kitchentrialanderror.blogspot.com/2010/03/risotto-with-bacon-peas-and-leeks-and.html">in the oven</a>. set aside to cool slightly and crumble.</li>
<li>while the bacon cooks, cook the pasta in salted boiling water for about 1/2 of the time on the package. add the peas and continue cooking until the low end of the pasta cook time on the package. drain and return to the pot.</li>
<li>add the ricotta, lemon juice and zest and season with salt and pepper. mix to combine.</li>
<li>top individual servings with crumbled bacon. </li>

<b>tuesday</b>. i picked up some apple onion pork sausage on sale at wegmans a couple weeks ago. i stashed it in the freezer for an easy weeknight dinner. tuesday, i sauteed it with onions, hard apple cider, and chicken stock and served it with baked potatoes. <br />

<b>wednesday</b>. i've seen a lot of black been soup recipes lately, but don't want to spend a day stirring a pot of beans. so i was happy when this <a href="http://www.makingthymeforhealth.com/2015/02/25/vegan-slow-cooker-black-bean-soup/">vegan slow cooker black bean soup </a>popped up in my feedly. i eliminated the jalapeno and it was perfect for all four of us.<br />

<b>thursday</b>. i've been wanting a good cheeseburger lately, so we had them tonight with corn & frozen french fries. earlier this afternoon, i whipped up these <a href="http://www.pink-parsley.com/2015/01/funfetti-sugar-cookie-bars.html">funfetti sugar cookie bars.</a> i let my toddler son pick out the sprinkles, which meant we had blue sprinkles mixed in (definitely not a good look) and rainbow nonpareils on top. regardless of color, they were delicious - jason loved the frosting, since it wasn't super sweet. <br />
<br />
<b>friday</b>. our friends came over, so i made a double batch of this homemade <a href="http://www.pink-parsley.com/2011/02/thin-crust-white-pizza.html">thin crust pizza</a> & topped three of them, freezing the last ball of dough for later. we had white, half cheese half pepperoni, and roasted vegetable pizzas with caesar salad.<br />
<br />
<b>saturday</b>. for breakfast, i topped a piece of roasted vegetable pizza that i warmed in my toaster oven with a perfectly over easy egg. it was delicious. lunch was more leftover pizza and dinner was spent at our friend's kid's second birthday party.<br />
<br />
<b>sunday.</b> i had forgotten how delicious roast chicken is & was miraculously able to make <a href="http://www.marthastewart.com/313997/lemon-roasted-chicken">martha's roast chicken</a> with roasted potatoes and make this <a href="http://traceysculinaryadventures.com/2013/03/glazed-meyer-lemon-buttermilk-bundt-cake.html">glazed meyer lemon bundt cake</a> all while watching the boys while jason was out. i seriously don't know how i was able to do this. and that cake?! buy some meyer lemons and make it as soon as you can!<br />

a couple weeks ago i made these <a href="http://practical-stewardship.com/2012/04/25/cilantro-lime-pesto-recipe-black-bean-burrito-recipe/">black bean burritos with cilantro lime pesto</a> for dinner, substituting <a href="http://kitchentrialanderror.blogspot.com/2010/03/tacos-with-spicy-corn-black-beans.html">my own black beans</a> for the relatively flavorless version in the recipe. while the beans were delicious as usual, it was the cilantro lime pesto that really was the star. ever since i've been looking for an excuse to top something else with it. </div>

for the soup:<br />
2 cups (1 pound) dried black beans<br />
14.5 ounce can diced fire roasted tomatoes<br />
1 bell pepper, diced<br />
1 medium onion, diced<br />
3 garlic cloves, minced<br />
2 teaspoons dried oregano<br />
1 tablespoon cumin<br />
1/2 to 3 teaspoons chili powder<br />
1 tablespoon worchestershire<br />
2 bay leaves<br />
4 cups vegetable broth<br />

for the cilantro pesto:<br />
1 large bunch fresh cilantro<br />
juice of 2 limes<br />
1/3 cup grated parmesan cheese<br />
1/4 cup sliced almonds<br />
2 garlic cloves<br />
extra virgin olive oil <br />

<li>rinse the black beans and pick out any small rocks. add to the slow cooker along with 2 cups water and the remaining soup ingredients. cook on HIGH for 8-10 hours.</li>

<b>sunday</b> dinner was this <a href="http://therecipecritic.com/2014/01/copycat-panera-broccoli-cheese-soup/">copycat panera broccoli and cheddar soup </a>with italian bread. i've never been a huge fan of broccoli - i distinctly remember only eating it as a child with a thick pour of homemade cheese sauce over it - and have been trying to eat more of it recently. this soup was killer. the only problem is that it made just enough for dinner; next time i'll double it for leftovers. <br />

<b>saturday</b>. a couple weeks ago i was at the National Institutes of Health in Bethesda, MD for work. i forgot to grab breakfast before arriving and got an almond croissant from the cafeteria. ever since, i've been dreaming of them & whipped up four using <a href="http://natashaskitchen.com/2013/11/01/almond-croissants-french-bakery-style/#_a5y_p=1416688">this recipe</a>. while good, they weren't great, so the search continues. <br />

for lunch, i made these <a href="http://amandascookin.com/turkey-pepper-jack-roll-ups/">turkey pepper jack roll ups</a> as a trial for upcoming birthday parties. they were easy to make & delicious, though next time i will skip the butter/mustard combo as it made the rolls a bit soggy. <br />
