monday we had leftover easter ham with baked & sweet potatoes. don't most people eat leftovers a couple days after holidays?
this last week was unique for us as i was home alone with roo tuesday through sunday afternoon. jason & winn spent five days & nights with jason's mother, out of state. since it was just me and roo for most of the week, i made simple, quick meals that the both of us liked. one night it was pasta with roasted vegetables and tomato sauce. another we had scrambled eggs, black beans, and bananas - three of roo's favorite foods. the rest of the evenings we had more easter leftovers, yogurt, fruit, cheese, hummus & soft pitas, and other things i typically have for a quick lunch at work.
while the boys were gone, i had a handful of baking projects i wanted to complete. and while i didn't finish them all, i came close. friday morning we had this strawberry dutch baby pancake for breakfast. and i spent saturday baking - first these meyer lemon crinkle cookies and then this glazed cinnamon pecan coffee cake. both were delicious!
i had been craving a cheeseburger for a week, so sunday evening we finally made our own, served with french fries and corn, and ate them outside on the patio for the first time this year!
